Louisville Zoo Today

My family and I went to the Louisville Zoo today, this is just one of many things that we are going to do this summer. We had got there around 10:30am and as we walked around the trails, some of the animals weren't out yet.

This is my husband and daughter measuring up against the tiger. This was taken right beside the tigers cage.

We had stopped at the Meerkats and watched them, that is Patricia's favorite animal, so every time we go we have to watch them for awhile. We also have to stay and watch the Gorilla's they are Billy's favorite. Now my favorite animal is the black panther, but there isn't any at the Louisville Zoo.

Billy said something about going to the Cincinnati Zoo in a couple of weeks.

Random

Nothing much has been going on lately, I think we have our days and nights mixed up. My husband and I don't go to bed until 7:00 or 8:00 in the morning.

I have been working on a few crochet projects, just as soon as I take some pictures, I will upload them so you can see them. My cousin is pregnant with her second baby, so I will starting on another blanket for her real soon. I have a couple of pictures of her first baby wrapped up in the blanket that I made for her, so as soon as I upload those pictures I will post them to.

Movie Night

We watched these two movies for our movie night, and they both were awesome.

Sunday May 9th

Today was Mother's Day and my daughter and husband took me out to eat to Down On Main Street. I really enjoyed myself, I was spending time with my family. When we got home I watched a couple of my episodes of Bones, then we watched a movie together as a family. I think we are going to start having a movie night every night. Even if it was only one movie that we watch together. This is the movie we watched tonight, it was actually pretty good.

Mothers Day

When my daughter came through the door yesterday afternoon, she was carrying a hanging basket of red flowers. The high school that she attends has a greenhouse and they were selling flowers for Mother's Day. I wasn't expecting anything from my husband or my daughter, she really surprised me. I love you, PC.

To all the mother's out there in the world, I hope you have a great Mother's Day and appreciate what your family does for you no matter how big or small it may be.

Dublin Coddle

Dublin Coddle

Serves 6

1 pound bacon slices
2 pounds pork sausages
Some bacon fat or oil
2 large onions, sliced
2 cloves garlic
4 large potatoes, thickly sliced
2 carrots, thickly sliced
1 large bunch of fresh herbs, tied with string
black pepper
hard cider (apple wine) or apple cider
fresh parsley, chopped for garnish

Lightly fry the bacon until crisp. Place in a large cooking pot. Brown the sausages in the bacon grease or oil. Remove and add to pot. Soften sliced onions and whole garlic cloves in fat, then add to pot with potatoes and carrots. Bury the bunch of herbs in the middle of the mixture. Sprinkle with pepper. Cover with cider. Cook 1 1/2 hours over moderate heat, do not boil. Garnish with chopped parsley.

This is the recipe that we used last night, I don't know exactly which website my daughter got it off of. But it is a very good Irish recipe and easy to make. The sausage that we used was the skinless smoked sausage links and we used the apple cider. It had a great flavor and we will most likely fix it again.

Can't Sleep

Tried to go to bed early tonight, but I can't sleep. So here I am writing this at 2:45 in the morning. We tried something new for supper last night, it was actually pretty good. It is called DUBLIN CODDLE it is a Irish dish, my daughter had to fix it for school as a project. The only broth that it called for was apple cider, I really didn't think it would be any good because of that reason.

Oh boy, was it good; I think she's going to have to fix supper more often. My husband liked the idea of having fixed something different, he wants me to start looking for more different recipes for supper. Our daughter gets after us about having the same thing all the time (spaghetti and pizza).
Can't really help it though, we stay busy with all three of us going to school.

Billy is going to college to get his Masters Degree in Applied Arts and Science, he is going to be a Lawyer and then one day a Governor of Kentucky. I am going to college to get my Bachelors Degree in Applied Science in Human Services. Right now Courtney is still in High School, she is also wanting to go to college in a few years. She's wanting to become Journalist.

Billy also has a blog of his own, you can click on the his link in my blog list. Billy keeps up with daily news, he really knows what's going in the world.

I'm going to try to go back to bed, again.......

Crochet (Mollie's Hat)

This is a hat that I crocheted for my niece Mollie, she will be 7 months old on the 7th of this month. It didn't take me very long to make it, just a couple hours one night while I was watching T.V.

Just sittin at home.......

Just sitting here trying to finish up on some extra credit for a class. Half the stuff I don't remember going over in the book, go figure RIGHT!!!! Cleaned up the living room and put the things back in there own places, big improvement. I don't know what my husband and I are going to do tonight, stay home or go out. Our daughter is not home she's staying with a friend....she's 16 so there will be a little peace in quite.


My first blog....be patient...

This is my first post so I really don't have that much to say. Just sitting here writing on my new blog, i'm just glad that school is out for the summer. No more college until August....Hooray. Hopefully, after I figure everything out, I will be posting some pictures of the things that I crochet. Crocheting is one of my favorite things to do and I also love to read. Well it's 4:30 in the morning, I think I should go to bed.
